Excellent cookware, the 10ga steel feels like it will never warp. The carbon steel is less porous than cast iron and seems to acquire and maintain a seasoned finish more easily. Best part of the experience has been talking directly with Dennis Kehoe, who has been most generous with his insights and advice about using and maintaining the (hand-forged) cookware.
